Butterscotch chocolate chip cookies

My best friend Gena and I used to spend hours in the kitchen baking.  It didn’t matter whose kitchen.  My house.  Her house.  One time we took over a chocolate bar and created masterful chocolate coffees.  We searched recipe books and our pantries for inspiration.  Our most creative was a fruit pizza which I can still remember the taste if I think hard enough about it.  Our mothers used to ask us to make dinner since we were always in a kitchen, but we couldn’t be bothered with anything other than desserts. 

My favorite cookie we made was an oatmeal scotchie.  Mrs. Scalise made them for us one time when we babysat for her kids and we were hooked.  Her kids were pretty great too 😉. They quickly became our go-to cookie of choice.  We made them for friends at school and for our basketball teammates.  We used any excuse to bake them.

When I had kids, I was so excited to share my love of scotchies with them.  I soon realized that none of my children like oatmeal in their cookies.  They are quite the difficult lot (that’s a nice way of saying pains in the rear). After my initial feeling of betrayal, we made due with other cookies. 

One day, my daughter had the brilliant idea (she gets that from me) to make chocolate chip cookies with butterscotch chips too.  Mixing chocolate chip cookie dough, with butterscotch chips?  Umm, yes please!  That is how we began making butterscotch chocolate chip cookies.  The richness of the butterscotch intertwined with the soft and chewy goodness of a chocolate chip, is sheer magic.  After mixing different recipes together, this is the best concoction we found.

 

We made a batch last night....purely to verify ingredients and take pictures.  I hope you enjoy!

 

2 cups flour (I use 1 cup all purpose unbleached and 1 cup whole wheat to make myself feel better)

3/4 tsp baking powder

1/2 tsp salt        

2 sticks of butter (don’t judge)

3/4 cup of sugar

3/4 cup of brown sugar (we sometimes substitute coconut palm sugar or sucanat)

1 tsp vanilla extract

2 eggs

1 cup of butterscotch chips

1 cup chocolate chips

Mix all of the dry ingredients then set aside.  Soften the butter and mix together with the sugars. Add the eggs and vanilla.  Slowly add the dry ingredients until well blended.  Fold in the chocolate and butterscotch chips.  If you haven’t devoured the dough already, drop spoonfuls of dough onto a cookie sheet one inch apart.  Bake at 350 degrees for ten-twelve minutes or until golden brown.  Let them cool before you eat them…..if you can wait that long.
